Lunch Lady Lou creates and delivers fresh and tasty lunches to busy corporates in the Sydney CBD and North Sydney. Lou, the Founder of Lunch Lady Lou is on a mission to transform how we think about, cook and eat our food.
As an ex-corporate of 10 years, Lou was fed up with the average soggy and salty salads being served in CBD cafes. She noticed the direct effect average food had on her mood, performance at work and the rest of her day. A health scare had Lou reconsider how she wanted to live her life. She flicked the corporate job, and set out on an epic mission to follow her heart, and put good food in your stomach.
Her recipes and meal prep tips have appeared online in Vogue Australia, Body + Soul, 1 Million Women and many more.
Go-to morning beverage?
Water and lots of it. I aim to drink around 1 jar full before anything else. Then at the moment it’s a black tea with a dash of milk.
What inspires you?
There’s nothing more inspiring than shiny happy people living their truth. You know when you look at someone and you can just tell that they’re being 100% themselves with no hidden agenda or game plan and they are so so comfortable with just that. It’s infectious.
What’s your philosophy when it comes to healthy living?
Sleep. Eat. Live. Repeat.
The one healthy treat you can’t live without?
Just one?! Yoghurt topped with cacao, cinnamon, toasted nuts and raspberries.
How do you relax and spend your ‘me’ time?
At the beach or by the water, cups of tea on my balcony or walks around my local park.
Where’s your ideal coffee date?
Just a takeaway by the beach is perfection.
Is it OK to eat chocolate for breakfast?
Sure why not? But in the words of my mum “fruit and veggies first before the treats”.
Favourite foodie or health & wellness instagram accounts?
Dark or milk chocolate?
I see the deliciousness in both. I love making my own dark choc and then swirling coconut cream through it to create a ‘milky’ effect.
What’s your favourite recipe that uses cacao?
My Bad As Chocolate Cake its super rich and dense, like a mud cake.
180g butter, melted
200g quality dark chocolate, melted (I prefer Green & Blacks 85% cocoa
1/2 cup coconut sugar (you may need more, taste test before adding extra)
¾ cup almond meal
1 cup cacao powder
1 teaspoon vanilla powder
Gently mix everything together to create a batter.
Pour into a cake tin and bake for 35 minutes at 140 degrees.
Top with cashew cream or double cream and fresh berries.
One mantra you live by
If in doubt add a handful of herbs.
