Choc Walnut & Goji Brownie Biscuits

These biscuits are deliciously soft, fluffy and oh so chocolately, they’ll almost trick you into thinking they’re brownies!

Makes 10 biscuits

Ingredients:

  • ¾ cup wholemeal flour
  • ⅓ cup cacao
  • ½ teaspoon baking soda
  • ½ cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for a vegan option – use a chia or flax egg)
  • 2 teaspoons molasses
  • 7 tablespoons olive oil (you could also use coconut oil for a coconutty flavour)
  • ¼ cup goji berries
  • ¼ cup walnuts, chopped

Method:

  1. Preheat your oven to 170 degrees Celcius conventional
  2. Sift together the flour, cacao and baking soda. Whisk in the coconut sugar
  3. In a separate bowl, whisk together the vanilla, egg, molasses and olive oil
  4. Add the wet mixture to the dry mixture. When it’s almost all combined, add the goji berries and walnuts, then finishing mixing (if the mix is looking a little dry, add a drizzle more olive oil).
  5. Place large spoonfuls of the mixture onto a lined baking tray. With wet fingers, press the biscuits so that they flatten ever so slightly, you want them to be quite thick though (which will account for their delicious soft and fluffy texture)
  6. Bake for 8 - 10 minutes. Allow to cool on the tray for about 5 minutes, then transfer to a wire rack to finish cooling…or eat them while they’re still warm!
