Salted Pistachio & Dark Chocolate Cookies

These pistachio and dark choc cookies are seriously moorish, and believe it or not are also vegan, gluten free and refined sugar free!

You won't be able to stop at one!


Ingredients:

  • 200g almond meal 
  • 100ml maple syrup (or honey/ rice malt syrup)
  • 100g good quality dark chocolate, chopped into chips
  • 1/2 cup pistachios 
  • 4 tablespoons of coconut flour
  • 1 heaped teaspoon of bicarb
  • 1 tablespoon of coconut oil, melted
  • Flaked Himalayan salt

Method:
  1. Pre-heat the oven to 160c, fan forced.
  2. Line a cookie tray with baking paper.
  3. Place all of your cookie ingredients (apart from the dark chocolate chips & pistachios) in a food processor and pulse until well combined. 
  4. Once combined, add in the chocolate & nuts and give it another pulse to mix through.
  5. Scoop out spoonfuls of the mixture and roll them into balls using your hands
  6. Squash them down into cookie shapes with a fork or fingertips and sprinkle with salt.
  7. Bake for 15-20 minutes until golden.
